Can you believe we are wrapping up the month of October? Halloween is less than a week away and kicks off the holiday food frenzy for many of us! I LOVE me some Halloween candy… I only want chocolate, lol! I’m a sucker for those miniature Reese’s Cups, Snickers, Twix, Butterfinger, and Peanut M&Ms.
I remember in past years sitting out with friends in their driveway to hand out Halloween candy to all the little trick-or-treaters and white-knuckling my way through HOURS of resisting the candy we were handing out. I gave away fist fulls to each kid just to get rid of it faster, lol!
If you want a healthier option to snack on this Halloween and something different to do with those roasted pumpkin seeds, then you will enjoy this recipe that I modified from Pop Sugar!
Pumpkin Spice Trail Mix (adapted from Pop Sugar)
¼ cup real maple syrup OR 1/4 cup Stevia granules
2 teaspoons cinnamon, Ground
2 teaspoons paprika
1 teaspoon pumpkin pie spice
1 cup unsalted whole almonds
1 cup rolled oats
1 cup unsalted pecan halves
1 cup roasted salted pepitas (shelled pumpkin seeds)
1 cup walnut halves
¼ cup pumpkin puree
2 Tablespoons all natural apple juice
⅔ cup dried cranberries
⅔ cup raisins
Preheat oven to 250°F. Mix maple syrup or Stevia, cinnamon, paprika and pumpkin pie spice in small bowl. Set aside.
Place almonds, oats, pecans, pepitas and walnuts in large bowl. Mix together pumpkin puree and apple juice; pour over nut mixture and toss until nuts are evenly coated. Sprinkle with spice mixture, tossing to coat well. Spread evenly on two baking pans.
Bake 30-35 minutes, stirring halfway through cook time. Cool completely. Stir in cranberries and raisins. Store in airtight container.
